Todays recipe is a staple in my house for sure! I make this almost once a week, because it’s quick, easy, and so good. If you’re like me, and you love all things pasta and lemon flavor, then you’re going to love this lemon pasta dish.
Chicken and Lemon Pasta
Ingredients:
- 2 boneless skinless chicken breasts
- 2 tbs lemon pepper seasoning
- 1 package of spaghetti noodles, cooked
- 3 tbs extra virgin olive oil
- 2-4 garlic gloves, minced
- 2 large fresh lemons, zested and juiced
- 1 cup grated parmesan cheese
- handful of fresh parsley or 1 tbs of dried
- salt and pepper to taste
Directions:
- Bring a pot of generously salted water to a boil, and then add your spaghetti and cook until al dente.
- Cut the chicken into bite size pieces, and season with salt, pepper, and the lemon pepper seasoning (here’s the exact one I use).
- Add 2 tbs of olive oil to a pan, once hot, add your chicken and cook until brown.
- Remove chicken and set aside. In that same pan add your garlic and cook until it starts to get fragrant.
- Add your lemon zest and juice and simmer for a couple minutes.
- Scoop your pasta and 1 cup of that pasta water, directly into the pan. Do not drain or rinse your noodles. The water will help form your zesty sauce and coat your noodles evenly.
- Add you parmesan cheese, parsley, and salt and pepper.
- Give a good stir and enjoy!
This is typically my go-to meal for nights that I’m not up for cooking a huge spread, but some nights I will whip up a side salad to pair with it. Most of the time all of these ingredients are already in my fridge and pantry, so it makes a quick and easy meal for us. You can always adjust the amount of garlic and lemons that you use, depending on your taste preferences! I also like to sprinkle on some more parsley and cheese.
