Today on the blog, I’m sharing my favorite soup recipe with y’all! I know, I know, this is not soup weather 😝, but I promise you once you try this soup, you’ll crave it during any season – hot or cold. It’s that good! The best part about this dish, are the leftovers! It’s even more delicious on the second day.
Chicken Gnocchi Soup
Ingredients:
- 4 tbs butter
- 1 tbs olive oil
- 1 cup finely diced onion
- 1/2 cup finely diced celery
- 2 garlic cloves, minced
- 1/4 cup flour
- 1 qt half-and-half
- 28 oz chicken broth
- 1/2 tsp dried thyme
- 1/2 tsp dried parsley
- 1/4 tsp ground nutmeg
- 1 cup finely shredded carrots
- 1 cup coarsley chopped spinach leaves
- 1 cup diced or shredded chicken (we use a small rotisserie chicken for more flavor)
- 16 oz package of gnocchi
Directions:
- Melt your butter in a pan with the oil.
- Add the onion, celery, and garlic and cook until the onion is translucent.
- Whisk in flour and cook for a minute.
- Whisk in the half-and half and simmer until thickened.
- Whisk in the chicken broth and simmer until thickened again.
- Stir in the thyme, parsley, nutmeg, carrots, spinach, chicken, and gnocchi (cook gnocchi accordingly to the package and rinse before adding).
- Season with salt and pepper to taste.
- Bring to a simmer so that everything is cooked through.
That’s it! We usually sprinkle in some freshly grated parmesan cheese at the end. So good, and can be made ahead of time to freeze!
