I may not bake tons, but I always try to make these muffins as much as I can, when I have all the ingredients on hand. It’s so simple to make, and fairly quick! Plus, it can easily be made into a loaf of banana bread instead.
Pretty much all of the ingredients needed for these muffins are more than likely already in your cabinet, which is why I make these quite a bit!
Ingredients
- 3-4 ripe bananas (the riper the better)
- 1 egg
- 1 tsp of vanilla
- 1/3 cup of melted butter
- 1 tsp of baking soda
- 1 tsp of salt
- 1/2 cup of granulated sugar
- 1/2 cup of brown sugar
- 1 1/2 cups of flour
- chocolate chips (I just eyeball quite a bit to add haha)
Directions
Preheat the oven to 350 degrees and mash up the bananas in a large bowl.
Add sugars, egg, vanilla, and melted butter into the bowl with the mashed bananas.
In a separate bowl, add flour, salt, baking soda, and whisk together.
Add the bowl with the dry mixture into the bowl with the wet ingredients and mix until combined.
Add in the chocolate chips and mix again.
Spray your muffin pan with cooking spray, to prevent them from sticking!
Scoop the batter into the muffin pan with an ice-cream scoop.
I like to add alittle more chocolate-chips to the top of each muffin, especially mini ones. So this is optional and completely up to you!
Bake for 20 minutes or until a toothpick comes out clean.
Once they’re done, let cool for 10 minutes and then enjoy! They are soo stinking good, it’s hard to eat just one!
These muffins can be turned into a loaf easily! Just swap out the muffin pan for a loaf pan and cook for 40-50 minutes rather than 20-30! Baking time varies depending on your oven!
