Happy Monday friends!
I’m currently home recovering from having my wisdom teeth removed 3 days ago. Aside from being sore, I’m surviving on all the soft foods – like soups and puddings, so I figured a soup recipe would be fun to share this week with y’all! Especially while the temps are still pretty cool. One of my go-to soups has to be chicken & noodles. It’s quick, easy, and such a comforting meal when you’re under the weather.
Here’s how to make the easiest One Pot Chicken & Noodles:
Ingredients:
- half of a rotisserie chicken or 2 chicken breasts boiled and shredded
- 4-6 carrots, peeled & chopped
- 4-6 celery stalks, chopped
- 1 medium onion, chopped
- 2 tbs of olive oil
- 1 tbs of minced garlic
- 4 cups of chicken broth
- 2 tsp of tyme
- 1/2 tsp of turmeric
- salt and pepper to taste
- a handful of fresh chopped parsley
- 2 cups of wide egg noodles
Directions:
- In a large pot, add your olive oil and veggies, and cook until the onion is almost translucent.
- Add your minced garlic and cook until fragrant.
- Add in your chicken broth, and bring to a boil.
- Stir in your seasonings, cooked chicken, and pasta, and cover.
- Reduce heat to simmer and cook for 20 minutes, or until the noodles and veggies are cooked through completely.
That’s it! This is seriously such a quick yet delicious meal idea! I probably make this once a week in the winter time since I usually have all the ingredients on hand, and because its a family favorite.
