I don’t know about you, but I always have shrimp on hand in the freezer. You can easily whip up a good meal with them! Our favorite way to eat them is in shrimp tacos. Rather than your typical slaw topping, we prefer cut up veggies, and this thai chili sauce. Technically its for chicken wings, but wowza is it good on these tacos. It gives the shrimp some tang and heat!
Ingredients:
- Bag of Medium or Large of shrimp (we like the already peeled and deveined ones)
- 1/4 cup of G Hughes Thai Chili Sauce (Walmart carries this, but it’s pretty popular & sometimes low in stock)
- 1/4 stick of Butter
- Frying oil (we use avocado oil)
- 1/4 cup chopped Cilantro
- 1 cup of Sour Cream
- 1 cup of Tomatoes
- 1 cup of Avocados
- Yellow Corn Tortillas
- 1 Lime (zested and juiced)
- Salt & Pepper to taste
I honestly just eyeball everything, so feel free to add more or less of any of these ingredients!
Directions:
- Heat a skillet with oil.
- Thaw, rinse, and pat dry your shrimp. Season with salt & pepper then set aside.
- Add your tortillas one by one into the oil. You want them to get crispy, but not chewy (a couple minutes on each side should work). Then take some tongs and bend the tortillas to shape them into shells. Once they are all nice and crispy, lay them on a baking sheet to let some of the grease drain. I like to sprinkle the shells while they’re hot, with salt!
- Heat another pan with butter. Once melted, add your shrimp and cook in batches. After they’re all cooked and a nice pink color, toss them in the chili sauce. You can heat the sauce in the microwave if you’d like!
- While the shrimp cooks, chop up tomatoes, avocados, and cilantro for toppings.
- Then mix the sour cream, with the lime zest, and half of the lime juice. We add some of the cilantro too! Such a yummy taco topping.
- Assemble your tacos with the shrimp in the shells first, then your tomatoes, avocados, cilantro, sour cream mixture, and more lime juice.
I love how quick, easy, and good this meal is! Plus it’s pretty easy to tweak too.
You can either cook the shrimp in the chili sauce or toss it in at the end like I did. And if you want a healthy alternative for the shells, you can use romaine lettuce instead. My mom usually does this and she loves it!
