Hope y’all are having a great Wednesday so far! Today’s post is a favorite recipe at our house. Poppyseed chicken casserole! You can easily enjoy this casserole by itself, but we like to serve it over buttered noodles. So stinking good & perfect for a quick meal.
Ingredients:
- 2 lbs of boneless & skinless chicken breasts, cooked – shredded or cut up (whichever you prefer)
- 8 oz package of sour cream
- A can of cream of chicken soup (or mushroom)
- 1 package of ritz crackers (crushed up)
- 1/2 cup of melted butter
- 1 tbs of poppyseeds
- Half a package of wide egg noodles (optional)
- Half as stick of butter (optional for the noodles)
Directions:
For Casserole: In a bowl, mix together your chicken, cream of chicken soup, and sour cream – add mixture to a casserole dish. Then combine the crushed up crackers, melted butter, and poppy seeds – sprinkle over the chicken mixture. Bake for 30-40 minutes (depending on your oven), at 350 degrees.
For Optional Noodles: Bring a pot of water to a boil, salt, and add your noodles. Cook according to package. Once cooked, drain and rinse. Then add half a stick of butter to that same pot you used, melt and add your noodles back in. Season with salt, pepper, and parsley!
You can either serve this casserole over the noodles or enjoy it by itself. Either way it’s good. Super simple and quick recipe. This is such a great dish to bake and take!
