This weeks post is another easy recipe. Some people call it sunshine in a jar, but this dandelion jelly is the perfect addition to your fridge during the spring and summer months. All you need is some dandelions hand picked from your yard! Be sure to avoid places where there was any chance of anything being sprayed or where pets could have been hanging out. You also do not want the stems, just the flower part, as the stems are poisonous.
Ingredients:
- 2 cups of dandelion heads
- 4 cups of boiling water
- 1 box of fruit pectin powder
- 3 & 1/2 cups of sugar
- 2 Tbs of lemon juice (optional)
Directions:
- First you want to make your dandelion infusion, so give your flowers a good rinse to eliminate any bugs. Then boil 4 cups of water and pour your water over your dandelion heads. Put a lid over your flowers and allow to steep over night in the fridge.
- After 24 hours, remove the dandelion tea from the fridge, and strain into stock pot. Discard the flowers, and add your fruit pectin into your tea. Bring that mixture to a rolling boil. Once boiling, add in your sugar and continue to boil for 2 minutes. Remove from heat and ladle into jelly jars. Process in a water bath canner for 10 minutes, then allow 24 hours to cool and set up on your counter.
- Be sure to check your jar lids the next day to make sure they successfully sealed before storing in your pantry. If you aren’t canning your jelly, you can just fill your jars and let sit overnight until they sit up, then store in the fridge.
