soup season is here! so let’s make some lasagna soup 😉

Lasagna Soup Recipe:

Ingredients -
2 tablespoons olive oil
1 cup chopped onion
2 teaspoons minced garlic
1 lb. ground beef (we sometimes use deer or buffalo)
32 oz. chicken broth
30 oz. can petite diced tomatoes, with juice
6 oz. tomato paste
1 teaspoon oregano
1 tsp onion powder
1 teaspoon Italian seasoning
splash of worcestershire sauce
fresh chopped basil (optional)
8 uncooked lasagna noodles, broken into pieces
1/2 cup parmesan cheese
1 cup shredded mozzarella cheese (or cheddar)
salt and pepper to taste
ricotta, for serving

Directions -
In a large pot, add your oil, onions, garlic and cook until translucent. Then add in your ground beef and cook until brown. Be sure to drain any excess fat. Add your seasonings, Worcestershire sauce, and tomato paste and give a good stir. You want the paste to be well incorporated. Then add in your tomatoes and broth and bring to a boil. Once boiling, add in your broken noodles and simmer on low for 15-20 minutes. Just long enough until the noodles are cooked. Top with your shredded cheese and serve! You can add a spoonful of ricotta to each serving! :)

a weekly staple meal in our house - deer roast 😋

- season your roast with whatever seasonings you like
- brown all side in a pan with olive oil
- use wine vinegar to deglaze and add some fresh garlic and vegetable stock (this is key to remove the gamey taste) cover about 3/4 of the way with the broth
- cover your pan and pop in the oven for 2 hours at 300 degrees F
- after the 2 hours, remove, and baste the roast woth some of that broth
- add in onions, celery, and carrots
- I also sprinkle in Alittle garlic powder and paprika at this point and stir it all
- then pop it back in the oven, covered, and bake for an additional hour
- once it’s done, remove from the oven and shred

*we like to eat our roast over buttered noodles* 🤤

Easy dump and go Crockpot Chicken Pasta! One of our families favorite crock pot meals!

Here’s how to make it:
In a crockpot add:
- 1 jar of pasta sauce
- 1 jar of alfredo sauce
- 2 boneless skinless chicken breasts
- season with salt, pepper, garlic powder, onion powder, and Italian seasoning
- 1 box of bow tie pasta
- shredded mozzerella cheese and Parmesan to top

Add sauces, chicken, and seasonings to your crockpot. Cover and cook for 3 hours, then remove chicken and shred. Add cooked pasta (we use bow tie), and shredded chicken back to crockpot, and adjust seasonings if needed. Top with shredded cheeses and cover. Cook for an additional 15 minutes, until cheese has melted. Enjoy!!

It’s almost officially FALL - which is just another word for pumpkin everything in my book! 😉

this pumpkin sauce is perfect for adding the right amount of spice to any cup of coffee, whether it’s iced or hot!

recipe:
- warm 1/2 cup sugar & 1/2 cup water until sugar dissolves
- turn off heat and add in a 14 oz can of sweetened condensed milk, 2/3 cup of pumpkin purée, and 1 tsp of pumpkin pie spice
- let sit for 1 minute and give it a good stir
- store in an airtight container and add 1-4 tbs to any coffee

*this keeps for 1 week in the fridge*

a few months ago, my husband and I cut caffeine out of our diet. we drank way too much and began seeing some of the negative side effects with daily consumption. my anxiety was always through the roof anytime I drank it. since we’ve cut it out, my anxiety isn’t near as bad, I sleep so much better, and I feel more awake and alert. didn’t even know that was possible without caffeine 🤪 don’t get me wrong, I still take a natural daily supplement that helps give me that energy boost, but in a more natural way.

one of my favorite drinks in replace of my morning and evening cup of coffee is this: a cup of hot water, a pinch of cinnamon, 1 lemon slice, and a drizzle of honey. not only does this surprisingly taste good, but it helps detox your body and get rid of bloating. it’s a win win for sure! ☕️
